Idea of 'A Little More' Pastas came more out of my laid-back attitude to cooking, than any fancy reason. Like you, I also enjoy eating tasty, warm, clean, better, sumptuous, and flavourful food. But cooking— last on my agenda! If I happen to relish good food without adding layers of hassle, effort and time, it’s a God-sent boon!

My personal problems found resonance in predicaments of food service operators of Corporate Parks, Educational Institutes, Airline Catering, and Restaurants. They look for operational ease and efficiency while managing and organising the food services on a large scale.

1) What is your Freeze Dried Ready-to-Eat (RTE) Pasta?

Our RTE Pasta is a fully cooked pasta meal that is preserved using Freeze Dry Technology. The cooked pasta and sauce are processed to remove moisture while maintaining the product's characteristic taste, aroma and texture.

To enjoy it, simply add the recommended quantity of hot water, allow it to rehydrate for the specified time, stir and enjoy.

2) What is freeze-drying?

Freeze-drying is a food preservation process in which the prepared food is first frozen and then placed under vacuum. The frozen water is removed through a process called sublimation, converting ice directly into vapour.

Because the process removes moisture without conventional high-temperature drying, it can help preserve the food's flavour, aroma, structure and other quality
characteristics.

3) Is freeze-dried pasta the same as dehydrated pasta?

No. Both processes remove moisture, but they work differently. Conventional dehydration generally uses heated air to remove moisture, whereas freeze-drying involves freezing the product followed by moisture removal under vacuum.

The difference in processing can affect the final product's structure, rehydration behaviour, flavour and texture.

4) Does the product contain fresh or cooked ingredients?

Our recipes are prepared using selected food ingredients and cooked before undergoing freeze-drying. The exact ingredients vary by flavour and are always listed on the product packaging.

5)  Does freeze-drying change the taste of pasta?

Freeze-drying is designed to preserve the food's characteristic flavour and aroma while removing moisture.

Once properly rehydrated, the pasta is intended to deliver the flavour profile of the prepared recipe.

6) Is freeze-dried pasta healthy, and does freeze-drying affect nutrients?

Freeze-drying is a preservation technology and does not by itself make food healthy or unhealthy. The nutritional value depends on the ingredients and recipe.

Freeze-drying can help preserve many of the food's nutritional and sensory characteristics. However, nutrient retention can vary depending on the ingredients and processing conditions. Please refer to the nutrition information provided on the product packaging for details.

7) Why does freeze-dried pasta have a long shelf life?

Microorganisms require available moisture to grow. Freeze-drying substantially reduces the product's moisture/water availability. Combined with appropriate packaging and controlled manufacturing, this allows the product to remain shelf-stable for an extended period.

8)  Why is freeze-dried food lightweight?

Most of the weight of fresh cooked food comes from water. Freeze-drying removes much of that water while retaining the food's solid components, significantly reducing the product's weight.

2) Why should I choose freeze-dried pasta instead of regular instant pasta?

Our freeze-dried pasta is designed around cooked pasta + sauce + rapid rehydration, rather than simply relying on a conventional instant-pasta format.

The objective is to provide a convenient meal while retaining the characteristics of the prepared recipe.

3) Does your pasta contain preservatives, artificial colours or artificial flavours?

Our products are formulated as per the ingredient declaration provided on the pack.Where a particular SKU is made with food additives, this will be clearly stated on the product packaging or product page.

The shelf life of our freeze-dried products is primarily supported by moisture removal, controlled processing and protective packaging.

4) How much water should I add, and can I adjust the quantity?

The recommended quantity of water is mentioned on the pack for each product. For the best results, we recommend following the specified quantity, as the water-to product ratio is important for achieving the intended pasta texture and sauce consistency.

Adding more water may make the sauce thinner and dilute the flavour, while adding substantially less water may result in incomplete rehydration or a thicker consistency. You can make minor adjustments according to your personal preference, but for the intended eating experience, we recommend following the preparation instructions on the pack.

5) What happens if the pack is opened?

Once opened, the product is exposed to moisture and air, which can affect its quality and texture. For the best taste and quality, prepare and consume the product soon after opening.

6) Can I carry the pasta while travelling?

Yes. One of the major advantages of the format is its lightweight, portable and shelf stable nature.

It is particularly convenient for travel, work, college, outdoor activities and situations where fresh cooking facilities are limited.

7) Why is freeze-dried pasta priced higher than ordinary instant pasta, and is it worth it?

Freeze-drying involves specialised equipment, controlled processing, additional energy and protective packaging, making it a more specialised preservation process than conventional instant-food methods.

For consumers, the value comes from convenience, portability, quick preparation and shelf stability.

8) What is the small sachet inside the pack, and is it safe?

Pouches  contain an oxygen absorber to help protect the product's quality and shelf life. It is not edible and must be removed before preparation.

If the sachet is accidentally added to the pasta or comes into contact with the preparation water, do not consume the prepared product. Discard it and prepare a fresh serving.

Yes. Our manufacturing operations are conducted in accordance with applicable Indian food-safety and regulatory requirements. Our manufacturing facility is certified with USFDA, Halal, ISO22000, and FSSAI.
